Recently I’ve been getting phone calls requesting this recipe. Problem is I sorta wing it and make it different every time, so I had to make it again and pay attention to amounts. Its super versatile so feel free to make it with whatever you have on hand. A perfect summer dinner or weekend picnic meal. Have fun with it!
4 cups of shredded rotisserie chicken, or diced grilled chicken
Optional additions to chicken:
1 cup halved grapes
½ cup diced onion
½ cup diced celery
1/2 cup diced red bell peppers
½ cup diced or grated carrots
½ cup diced or grated cucumber
1 diced avocado
½ cup chopped almonds, cashews or pecans
¼ cup pumpkin or sesame seeds
1 cup cooked quinoa
Dressing:
½ cup mayo
½ yogurt (or skip mayo and use 1 full cup of yogurt)
2 tbsp lemon juice
Optional flavorings for the dressing:
½ bunch of minced cilantro, or
1 tsp dill or
1-2 tsp curry powder or
1-2 tsp any Indian curry paste (my favorite)
Directions:
-Mix chicken and all salad ingredients in a large bowl.
-Mix dressing ingredients in small bowl and add to above salad ingredients
-Serve on buns or as wraps or lettuce wraps. Or add lots of quinoa and make it a main dish. Or add 1-2 cups of shredded lettuce and make it a crunchy salad.
