I’ll never be an angel. But my birthday is coming and that means Angel Food Waldorf cake. Growing up, my mom gifted us with our favorite homemade dinner and cake for our birthdays and this cake is what I always requested. Now my daughters request it for their birthdays. It’s wickedly delicious. That just doesn’t seem right, does it?! But trust me. It is.
Bake 1 white angel food cake mix. (this is probably the only recipe you are going to see from me with a cake mix in it!)
Place baked cake upside down to cool.
Beat together: 3 cups chilled whipping cream
1 ½ cup powdered sugar
¾ cup cocoa powder
Slice entire top of cake about 1 inch down and set aside
Make 2-3 inch cuts down into cake 1 inch from inner and outer edges and scoop out the middle, leaving substantial walls on each side and bottom. Remove middle of cake, careful to leave a 1-inch base.
Place cake on serving dish and fill with ½-2/3 of the chocolate whipping cream.
Replace the top of cake and press into cream filling.
Frost cake with remaining whipping cream
Chill at least 4 hours or until set
This is the point the devil comes and taunts me. I overcome by removing all temptation. One creamy, chocolatey slice at a time.

Wow. All these years and I never new how that cake was made. Probably doesn’t surprise anyone who knows how much time I spend in a kitchen.
